Organoleptic characteristics:
Appearance: Clear and bright, lemon yellow with olive glints.
On the nose it is very intense, complex and elegant, with memories of orchard and mountain plants (fennel, thyme, coriander, elderberry, celery, maruxas, nettle flowers, chestnut cande) and fresh fruits (acerola, green plum, medlar, persimmon, quince, wild pear, etc.).
In the mouth it is pure balance and harmony, with the smoothness of the fruit, but with nerve and tension maintained thanks to a mineral freshness (mica, quartz), memories of a light aging (cream biscuit) and a finish that returns to the soil (terracotta, grapefruit), long flavor and aromas.
Gastronomy:
It pairs perfectly with fresh seafood, light white fish and vegetable dishes with aromatic herbs and citrus touches.
